The Belgians claim they were frying potatoes as early as 1680 but bizarrely it is US President, Thomas Jefferson, who provides the earliest evidence that the chip was invented by a Frenchman. In one of the President’s manuscripts (circa 1801-1809) he mentions “Pommes de terre frites à cru, en petites tranches” (“Potatoes deep-fried while raw, in small cuttings”) which was certainly one of Honoré Julien’s dishes, his renowned French chef.
