Great news on my last blog post. For those who have been following my updates, we have now completed the Kcal information for the Scottish Parliament with help from Wan Mak our Sodexo nutritionist and dietician. There’s been a lot of hard work involved but its proven well worth it. Hopefully you’ll be able to see the health benefits by the spring in the step of our Scottish MP’s.
Earlier this month I attended the National Craft Forum in London where all the Sodexo development chefs get together to discuss best practice and new innovations. On this occasion we had a tour of some great sites in London, The houses of Parliament being one of them, and we also met with one of our suppliers, Brakes, who talked us through some of the great seasonal products available to us (Marsh Samphire and Gooseberries are both in season right now and are quite delicious).
We held a BBQ for 700 guests this week, and surprisingly the weather held out for us. Our chefs barbecued some great dishes like piri piri prawn brochettes, Thai glazed and barbecued chicken, tikka marinated river cobbler, and that old chestnut, the beef burger (that’s a thought, maybe we could roast chestnuts next time?). Our ‘King of burgers’, made from succulent Scottish steak on ciabbatta, accompanied with some tasty fresh seasonal salads, proved a great success. If anyone would like recipes from our BBQ then please drop me a line and I’ll send them on.

I work on HMS Belfast and we do BBQ’s on the Ship, just wondered if you could send us some more creative ideas for our menus next year? We’re always on the look out for something new and different.
