We asked our Twitter followers ‘if you had to choose between cheese or chocolate, which would it be?’ And the winner was cheese! So as promised, below find a divine recipe from Danilo Barbagallo, head chef at Bateaux London, for Parmesan Mousse. Enjoy!
Parmesan Mousse
Danilo suggests serving this on toasted walnut bread with pea shoot salad and balsamic dressing. Delicious, but beautifully simple to make!
Ingredients – Serves 6
250g double cream
½ tsp salt
½ tsp nutmeg
Pinch of white pepper
100g grated parmesan
½ tbs crème fraiche
Method
Whip the crème until it starts to thicken, then add the salt, nutmeg, white pepper, parmesan cheese and crème fraiche. Mix slowly until all ingredients are combined and the mixture is smooth but will hold its shape. Allow to chill in the fridge until ready to serve.
